Several years ago, I found a recipe for Queen Elizabeth II’s favorite cake: chocolate biscuit cake. The recipe is by her former personal chef, Darren McGrady, who says that this was the one cake that she would eat until it was all gone – he even used to travel with her on the train from London to Windsor castle with the leftovers in a tin. I knew I’d have to make it someday, but it calls for Rich tea biscuits, which are not readily available in South Texas. After the Queen died, though, I decided to order them online and make this cake. I had two packages of biscuits, and you need slightly less than one package to make the cake. I’m glad I had two, because the first time, I broke them into pieces that were a bit too big, so I rectified that the second time around, and that’s why I’m only posting about it now. This is an unusual cake, richer and sweeter than I expected, but I’m really glad I made it, and I think I’ll adapt the recipe to use local biscuits at some point.

Chocolate Biscuit Cake
Poulet pané, nouilles de légumes et vinaigrette tao
Ce poulet pané avec nouilles de légumes et vinaigrette tao de Ricardo était vraiment à mon goût! J’ai changé les quantités un peu pour en faire deux repas (les quantités ci-dessous donnent 4 portions) : j’ai doublé la quantité de poulet et j’ai ajouté une carotte. J’ai aussi râpé les deux dernières carottes au robot plutôt que de les spiraliser à la main, parce que bon, chacun gère son temps comme il veut, hein? La sauce est délicieuse, mais j’aurais mis un peu moins de sriracha; par contre, le Petit Prince dit que c’était parfait comme ça! L’Ingénieur n’a pas aimé, je ne sais pas pourquoi.

Spero Sunflower Cream Cheese
I was recently sent some sunflower cream cheese by Spero Foods, which is “on a mission to change the way people think about cheese and dairy alternatives.” They make several different flavors of the cream cheese, and since it’s made with sunflower seeds as the first ingredient, it’s quite nutritious in addition to being environmentally friendly! It's also vegan as well as free of major allergens.
Mouhalabieh
J’ai tiré cette recette du livre Déjeuners protéinés d’Hubert Cormier. Le mouhalabieh, qui est un dessert libanais, ça ressemble à du blanc-manger, donc une sorte de pouding qui serait un peu plus solide qu’un flan ou une crème caramel. Ici, le plat est parfumé à l’eau de fleur d’oranger, mais je verrai bien ça aussi avec de l’eau de rose! Les quantités ci-dessous donnent 2 portions. (Et ne faites pas attention à mon reflet dans la cuillère de la dernière photo – je voulais juste vous montrer la texture!)

Lentil Quesadillas with Green Sauce
Since the apple cheddar quesadillas had gone over so well, I decided to try something a bit heartier: lentil quesadillas from Pinch of Yum, with a filling made in a slow cooker. This seemed much more indicated for the cold weather! The issue that I ran into was that the lentils and rice took forever to cook – after 8 hours on high, I gave up. (White rice would cook faster, but I don’t know how much of the issue was the rice and how much was the lentils as well.) That being said, the filling was still very good, and while the Fox predictably refused to taste it, the Little Prince liked it. The amounts here also seem off, because I had way more than I would have needed for the 8 quesadillas advertised! I froze half of it, and while I can attest that it’s still good once thawed and warmed up, we’ve now had enough for 4 family meals and still have a bit left over. Be warned! Also, don’t skip the green sauce, it’s fantastic. I served this with a green salad made with leftover ingredients I had lying around, though it’s entirely optional.
Marbled Banana Bread
I tried Jessica Seinfeld’s banana bread with cauliflower purée, and it was fine. And then eventually I tried Deb Perelman’s marbled banana bread, and that was much more of a hit with my kids!

Gâteau des anges aux fraises et à la rhubarbe
J’ai décidé de faire ce gros gâteau de Coup de Pouce avec des fraises que j’avais cueillies moi-même et mises au congélateur par la suite. Ma rhubarbe aussi était congelée. Donc, est-ce une recette de saison dans mon cas? Pas du tout. Mais ce gâteau était délicieux!
Salade de chimichurri aux légumes
J’ai adapté une salade de chimichurri aux légumes grillés il n’y a pas longtemps, en utilisant la fonction broil du four au lieu du grill et en ajoutant un œuf dur (pour les protéines) et des graines de citrouille. Je vous encourage à aller voir la photo sur le site de Ricardo, la salade est vraiment magnifique! J’ai dû faire des concessions ici.

Slow Cooker Korean Beef
I really liked this slow-cooker Korean beef recipe because it was very little work, but also very flavorful. I did feel like I had a lot of sauce for the amount of beef, but then again, I had to trim a lot of fat from my roast, so it may be that I’m the one who didn’t have enough beef. That being said, it was delicious! I served it on leftover rice.

Cherry Noodle Kugel
I had been meaning to try this vegan cherry noodle kugel for probably 10 years, and just never got around to it. But then I had 8 ounces of wide egg noodles in the pantry and decided to go for it. (I mean, I don’t need it to be strictly vegan, so egg noodles and lactose-free milk are fine for me.) It was a nice departure from plain kugel (which, don’t get me wrong, can also be fantastic), but it turns out that my kids don’t like kugel, and this was too much for two people. It was good, though!

Filet de porc, sauce au thé Earl Grey
J’avais l’impression que ça faisait longtemps que je n’avais pas fait de viande réussie. J’avais essayé des boulettes de dinde miel et sriracha qui étaient trop piquantes, même après avoir réduit la quantité de sriracha de 75 %. Puis des boulettes de poulet et parmesan qui étaient correctes, mais pas géniales.

Spinach Stromboli
I had seen this recipe for antipasto stromboli and originally thought I’d make it for dinner, but one day when I was looking for inspiration for my kids’ school lunch, it jumped out at me. It looked healthier than my previous stromboli, and I did have some of the ingredients on hand, so I decided to adapt it a bit. I used about half the amount of spinach and thought it was plenty; I did not have sundried tomatoes or olives, and willfully omitted the pepperoncini. I also used pepperoni instead of prosciutto, and was working with 12 oz of homemade whole wheat pizza dough. That being said, even though it had green and red vegetables, my kids really liked it! Plus, the Fox’s teacher even asked for the recipe! When I emailed it to her, I said that because I had only heard the Fox’s version of the conversation, I didn’t know if she really wanted it or was only being polite, but sent her the link along with my modifications. She replied that she indeed wanted the recipe, because she thought my son always had lunches that looked delicious, and this in particular looked like the kind of thing that her own three-year-old daughter would eat. I also thought that the few slices I had were really good. So, there you go, a crowd-pleaser!

Beignes à l'orange et au chocolat blanc
J’ai vu cette recette de mini-beignes dans un magazine Ricardo Noël dernier. C’est une recette créée pour faire mousser les ventes de leur nouvelle machine à mini-beignes, que j’ai vue en magasin l’été dernier. Je n’avais aucune intention d’acheter un nouvel appareil électroménager, d’autant plus que j’ai des moules à beignes qui vont au four et que je n’ai jamais vu d’autre recette utilisant cette petite machine! J’ai donc décider de l’adapter pour une cuisson au four dans des moules standard.

Tarte tatin à l'érable
