Mango Chia Pudding

 


This chia pudding recipe is from Petite Pancakery. I changed it a bit – my mango was ripe enough that I was very happy chopping it and serving it as is, rather than puréeing it with sugar-free syrup. The version below is mine. The amounts below are mine as well; this makes about 2 servings, and feel free to increase the amount of mango! 

1 cup light/fat-free coconut milk or plant milk 
¼ cup lactose-free Greek yogurt 
1 scoop vanilla protein powder 
2 heaping Tbsp. chia seeds 
2 Tbsp. sugar-free syrup 
1 medium-large mango, peeled and diced 

 
Mix together the coconut milk, yogurt, protein powder, chia seeds, and syrup. Place in fridge and let thicken overnight. 

To serve, layer the pudding with mango pieces in a cup or bowl. Sprinkle with your toppings of choice, if desired.
