I found this recipe on Eat Yourself Skinny. I think these are “healthy” only insofar as they are made with yogurt instead of oil, but obviously they’re not low-carb. That being said, these cookies were delicious, and the Little Prince went so far as to say that they were the best cookies he’s ever had! So when I told him that they were easy to make (only 3 ingredients), he decided he wants to be the one to make them next time. I’ll hold him to it!
1 (18.9 oz) box Funfetti cake mix
½ cup fat-free lactose-free vanilla yogurt (I used Noosa)
2 eggs
Preheat oven to 375 °F.
In a medium bowl, combine funfetti cake mix, yogurt and 2 eggs and mix until all clumps are gone.
Drop by tablespoonfuls (I used my 3-oz. cookie scoop and got 12 cookies) onto a cookie sheet greased or covered with a silpat and bake for about 10 to 12 minutes (I baked mine 11 minutes), until cookies are slightly browned on the bottoms.
These keep well for a few days provided they are in an air-tight container.
