Banana Ice Cream
Let’s say you don’t own an ice cream maker. Let’s say you want to make some kind of frozen dessert, but without a lot of ingredients. Let’s say you want it to be lactose-free, gluten-free, nut-free or even vegan. It sounds tough, right? And yet, the answer is surprisingly simple: bananas. Period. I first saw this on The Kitchn a year or two ago, but it’s been making the rounds since then.
You need about three bananas (though two would be fine, and four as well). Peel them, cut them into pieces and freeze them a few hours. then throw them in the food processor and purée them. They magically turn creamy and have an ice cream0like consistency. If they weren’t very ripe, you can add a bit of brown sugar or honey. If you want more flavour, add some nut butter or chocolate syrup. But even on its own, this banana ice cream is a great, low-sugar treat.
